The Latest and Greatest

Avocado Chocolate Chip Cookies! 

Inspired by my team mate Amber Gaffney.

Guilt free cookies. No butter, oil or sugar, and they still taste great! 



Ingredients

-1 medium avocado 
-1 egg
-1tsp vanilla
-1/4 cup of maple syrup
-1/8 cup honey 
-1 cup of flour 
-1 tsp baking soda
- pinch of salt 
-3/4 cup of oats 
-1 tbsp cocoa 
-3/4 cup of chocolate chips 
-1/2 cup of dried cranberries 
-1/3 cup pumpkin seeds 


Directions 

1. Preheat oven to 300F.

2. Blend avocado with a mixer until slightly lumpy. Add egg, vanilla, maple syrup and honey.  Mix on high until smooth. 


3. Add Flour, baking soda, salt, and cocoa. Blend on low until just mixed, then add the oats. 


4. Add the chocolate chips, cranberries, and pumpkin seeds. 


5.Cook at 300F for 15-18 minutes

Makes 24 cookies.

Other suggestions: You can add anything to them, like coconut, apricots, dates, walnuts, etc.  If you like a sweeter cookie add more maple syrup and honey. Be creative! Send me your creations with pictures!
